SAMPLE LUNCH BOXES

Here are a handful of lunch-box combinations. Make extra vegetables, muffins, rice, etc., at dinnertime to use during the week in box lunches. Recipes are provided for the items in boldface.


GROWING FOOD VEGETABLE SEASONAL FRUIT
burrito (sprouted whole-wheat tortilla, mashed pinto beans, salsa, grated cheese) cucumber slices red grapes and Over-the-Hurdle Oatmeal Cookie
tofu slices sauteed in butter and tamari with brown rice nori (cut in shapes) satsuma
Karen's Sesame Noodles baked sweet potato plum
turkey sandwich on sprouted whole-grain bread corn (frozen or fresh) apple slices
Apple Miso Almond Butter Sandwich snap peas nectarine slices
baked or grilled chicken slices raw or steamed green beans melon slices
whole-wheat pita bread, hummus, sliced cucumber, sliced tomato Sweet Squash Corn Muffin kiwi slices
smoked salmon bites or a hard-boiled egg veggie sticks (carrot, celery, red bell pepper, jicama) fresh pineapple chunks
110% Chicken Noodle Soup blanched broccoli pear
avocado, cheese, cucumber, and sprouts sandwich Roasted Potatoes and Carrots with Cumin and Cinnamon and slices of fresh red pepper strawberries, raspberries, or blueberries
Rice Balls Rolled in Sesame Salt cherry tomatoes dates and/or Trail (nut) Mix, or soaked almonds
